   If I created a map on a server before 1.3, will the map update to include all the new stuff in 1.3 automatically, or do I have to start a new map for it to include all the new additions?

   You will get the additional "areas" in new chunks that are loaded. Which means areas where people have not been will be loaded with the new "areas".
