Do any of you know a good plug-in that saves the world every (amount of time) then when you get griefed you can roll it back?

Minebackup is the best one I've found. Backup did a weird thing where it backed up its own backups despite not being configured to.

Get something like HawkEye or Guardian - Those plugins show you who did what and when. They also log all player chats/teleports/deaths/commands/chest transactions/etc.

I would use Minebackup and LogBlock (a more reliable version of Hawkeye). You'll need a MySQL database for LogBlock/Hawkeye though.

LogBlock will track all changes by players and yes, you can roll them back. But it doesn't track WorldEdit, so if someone gauges a massive hole in your spawn or you get a corrupt map randomly (happens more than you'd think) you can't get it back without a backup.
